Top Mexican chefs share the secret to great guacamole

As the British summer approaches (well kinda) the foodies among us will welcome guacamole – a zingy sauce of avocado and citrus – to compliment some grilled fish or corn chips. Guacamole is a traditional Mexican food which has become increasingly popular internationally. However, as many would-be and professional chefs can attest, the hardest part of making guacamole is often getting ripe avocados.

Juan Pablo Loza is the head chef at the Maroma Resort near Cancún in Mexico. Following his visit to the UK, he divulged how to make the delicious green sauce of which his five-star guests eat so much (the hotel uses an astonishing 80lbs avocados a day). The secret, he suggests is a wooden spoon!
